The archeological site of the Graufesenque in Millau is witness to a flourishing gallo-roman past.

From the Middle Ages the Templars sought to develop the breeding of sheep with the preparation of the animal skins for Millau and the making of cheese from the ewes’ milk. This cheese was the predecessor of today’s Roquefort and was matured in caves at Roquefort that belonged to the Templars.

Millau
In the 1st century AD millions of Samian ware pots, made in glazed terrracotta, were manufactured at the Graufesenque site.
La Cavalerie
The town was founded in the 12th century by the Templars and fortified later (15th century) by the Hospitallers. In 1903 the government developed a military camp nearby that is still in activity.
Ste Eulalie de Cernon
The headquarters of first the Templars then the Hospitallers, Ste Eulalie governed all the sites of these two religious orders in the 12th and 15th centuries in order to finance the Crusades to the Holy Land.
Viala du Pas de Jaux
Visitors can get a panoramic view from the top of the grain-store tower built by the Hospitallers.
Roquefort
It's the natural draught passages « fleurines » in the limestone cliffs of the Combalou that condition the maturing of the king of cheeses : Roquefort.
Luzençon
The village of St Georges de Luzençon, situated on the foothills of the Larzac, has preserved examples of its its medieval past with its narrow streets, old fountain, remains of the ramparts, towers and gates. Don't miss the romanesque chapel at Luzençon.
The Millau Viaduct

340 meters high, Millau Viaduct will be one of the most outstanding engineering feats of the beginning of this century.

St Rome de Cernon



The remains of the 13th century castle overlook the village with its houses scattered down the hillside to the banks of the Cernon river. The castle of Mélac (14th century) has a beautiful interior courtyard with arcades and galeries on several floors.

Frayssinet Farm

To make Roquefort cheese before it matures in the caves there is the ewes’ milk and another profession : that of sheep breeder. Martine Fabrègues invites you into her sheepfold to see the lambs and taste foods made from ewes’ milk : delicious !
